It has a completely opaque white endosperm; a characteristic aroma and flavor; when it is cooked, the rice grains are sticky and adhere to each other, with a white translucent color. In addition, according to the provisions of Section 6 of TCVN 8368:2018, glutinous rice must meet the following food safety requirements:
- Pesticide residues: The maximum residue limit (MRL) for pesticide residues allowed in glutinous rice is as regulated in Circular 50/2016/TT-BYT.
- Heavy metals: The maximum limit for heavy metals in glutinous rice is as regulated in QCVN 8-2:2011/BYT.
- Microbial toxins: The maximum limit for microbial toxins in glutinous rice is as regulated in QCVN 8-1:2011/BYT.
According to Section 8.3 of TCVN 8368:2018, glutinous rice should be stored as follows:
Glutinous rice can be stored in a warehouse in bags on pallets or in silos.
The warehouse should be airtight to prevent the entry of insects and pests. The roof, floor, and walls of the warehouse should be waterproof and moisture-proof.
Before storing glutinous rice, the warehouse should be cleaned and disinfected. The floor, walls, and pallets of the warehouse should be disinfected with chemicals that are permitted for use under current regulations.
Bags of glutinous rice should be stacked in batches, with each batch not exceeding 300 tons. Within each batch, the glutinous rice should be stacked according to the same quality grade and type of packaging. The height of each stack should not exceed 15 layers. The stacks should be stacked in straight rows, perpendicular to the warehouse floor to prevent them from collapsing.
Each batch of glutinous rice should be placed at least 0.5 meters away from the wall. The distance between two batches should be at least 1 meter to allow for easy access for inspection, sampling, and handling.
The warehouse, the batches of glutinous rice, and the surrounding environment of the warehouse should be cleaned regularly. Water should not be allowed to accumulate around the warehouse.
In addition, the packaging of glutinous rice must meet the requirements of food safety. Specifically, Section 8.1 of TCVN 8368:2018 specifies the following:
- The packaging of glutinous rice must be made from materials that are suitable for the intended purpose and do not have a smell that affects the product. The packaging must be dry, clean, intact, durable, and safe for food. Glutinous rice should be packed in packaging with appropriate weights.
At the same time, the labelling of rice packaging is also specified in Section 8.2 of TCVN 8368:2018 as follows:"
Labeling must comply with current regulations and must include at least the following information:
- The product name must be clearly stated as "Glutinous rice".
- Net weight.
- Name and address of the manufacturer, packager or retailer.
- Origin of the goods.
- Group/type/quality grade.
- Date of manufacture or date of packaging.
- Expiration date.
- Storage instructions.
Information for non-retail packaging must be stated on the packaging or in accompanying documentation, and the identification of the lot, name and address of the manufacturer or packager must be shown on the packaging. However, the identification of the lot, name and address of the manufacturer or packer may be replaced by a clear identification mark with accompanying documentation.
