1. Quality requirements for commercial duck eggs used as food in Vietnam

TCVN 1442:2018 stipulates the quality requirements for duck eggs as follows:

- Outside

+ Shape: The egg has a typical oval shape with a tapered end.

+ Color: Egg shells have the characteristic color of each duck breed.

+ Condition: Shell surface is smooth and clean; eggs are not cracked, cracked, or crushed.

+ Mold: No mold is visible to the naked eye.

- Inside

+ Status: The small air chamber, with a height no greater than 8 mm, does not move when rotating the egg; when peeling, the yolk should not stick to the inside of the shell. The yolk should be thick, and there should be a thick layer of white surrounding the yolk.

+ Color: The yolk has a normal and uniform color. The albumen is not cloudy

+ Smell: No strange smell

+ Mold: No mold visible to the naked eye

Duck egg classification:

Duck eggs will be classified into grade AA, grade A and grade B. The tolerance for each grade of duck eggs is as follows:

+ For grade AA: grade A eggs can be mixed, but the number of grade A eggs is not greater than 15% of the total number of eggs.

+ For grade A: grade B eggs can be mixed, but the number of grade B eggs is not greater than 15% of the total number of eggs.

+ For grade B: do not mix eggs with lower-quality grades.

All three quality grades mentioned above must not contain cracked, cracked, or crushed eggs; During transportation, one cracked, cracked, or crushed egg is allowed, but not greater than 3.4% of the total number of eggs.

Size classification of duck eggs

Duck eggs are sized according to weight as follows:

- Very large: Over 80

- Large: From over 75 to 80

- Quite large: From over 70 to 75

- Average: From over 65 to 70

- Small: From over 60 to 65

- Very small: Not greater than 60

Thus, duck eggs of each size can be mixed with eggs of an adjacent smaller size, but the number of mixed eggs is not greater than 3.4% of the total number of eggs. All egg sizes must not contain cracked, cracked, or crushed eggs; During transportation, one cracked, cracked, or crushed egg is allowed, but not greater than 3.4% of the total number of eggs.

2. Standards for packaging, labeling, preservation, and transportation of duck eggs in Vietnam

According to TCVN 1442:2018, regulations on packaging, labeling, preservation, and transportation of duck eggs are as follows:

- Packaging

+ Uniformity: Duck eggs in each package must be uniform in grade and size. The visible portion of the duck egg in the package must represent the entire egg inside.

+ Packaging: Packaging must ensure food safety, be durable when transporting eggs, and protect eggs.

- Labeling

Product labeling according to TCVN 7087:2013 (CODEX STAN 1-1985, with Amendment 2010). In addition, the following specific requirements should apply:

+ Label pre-packaged products for retail sale

The following information must be written on retail packaging:

++ The name of the product is "duck eggs", which may include the name of the duck breed, class, and size of the egg;

++ Number of eggs in a package or net weight in grams or kilograms;

++ Name and address of the manufacturing facility and/or packaging facility and distributor;

++ Packaging and/or best before date;

++ Signs to identify the shipment;

++ Instructions for storage and transportation.

Packages should be labeled "Fragile Goods".

- Label packages not for retail sale

The product name, lot identification, name and address of the manufacturer or packer, distributor, and storage instructions must be stated on the label; The information stated in 6.2.1 TCVN 11605:201 must be recorded on the label or in accompanying documents. However, the lot identification mark, name, and address of the manufacturing facility or packaging facility may be replaced by an identification symbol, provided that the symbol is readily identifiable with the accompanying documents.

- Preserve

Follow 3.3 of TCVN 11605:2016 (CAC/RCP 15-1976, Rev. 2007) and the following specific requirements:

Store duck eggs in a dry, clean, ventilated place without strange odors, and avoid direct sunlight. Do not mix with other items. Temperature changes should be avoided during storage.

Duck eggs stored for more than one week must be stored in a cool place or room with a controlled temperature of 10 °C to 13 °C and a relative humidity of 70% to 85%.

- Transport

Follow 3.3 of TCVN 11605:2016 (CAC/RCP 15-1976, Rev. 2007). Duck eggs must be transported by clean, hygienic means, protecting them from dirt, strange odors, physical impacts, adverse weather conditions, and direct light and temperature changes during transportation.
