How are dried bananas classified? Quality standards for dried bananas in Vietnam

Currently, how are dried bananas classified? What standards must the quality of dried bananas in Vietnam meet? My Ky - Ha Tinh.

Hello, Lawnet would like to answer as follows:

1. How are dried bananas classified?

TCVN 13122:2020 regulates the possible forms of dried bananas:

- Sliced form

+ Slice diagonally along the longitudinal axis into an oblong/oval/elliptical shape;

+ Slice lengthwise, cut into two equal halves, or cut into parts;

+ Slice into thin strips.

- Pomegranate pieces: cut into irregularly shaped pieces or cubes of approximately equal size.

- Other forms

Other product forms are allowed, provided that the product must be clearly different from the above-mentioned forms and fully labelled.

Dried bananas are classified as follows: Special Grade, Grade I, Grade II.

Defects that do not affect the general appearance of the product with regard to its quality, maintenance of quality and presentation in the packaging are allowed.

Thus, dried bananas are divided into 3 main types, including special grade, grade I and grade II. Among them, the special class has the best quality. Dried bananas are mainly sliced (cut lengthwise or horizontally) or diced. Some minor defects are allowed that do not affect the appearance or quality of the product.

2. Quality standards for dried bananas in Vietnam

Dried bananas that meet quality standards must meet the following requirements:

- Minimum requirements

In all classes, depending on the specific requirements for each class and allowable tolerances, dried bananas must:

+ Healthy, not crushed or damaged to the point of being unsuitable for use;

+ Clean, with almost no foreign impurities visible to the naked eye;

+ Does not contain living harmful organisms at all stages of their development;

+ Not damaged by harmful organisms, free of dead insects and/or mites, fragments, or their waste;

+ No burning, discolored areas, or black spots not exceeding 20% of the product surface;

+ There are no mold fibers visible to the naked eye;

+ Not fermented;

+ No abnormal moisture on the outside of the shell;

+ Does not have any strange smell and/or taste, except for the salty taste of sodium chloride and the slight smell of preservatives or additives. 1)

The condition of dried bananas must ensure:

+ withstands transportation and loading;

+ arrives at the destination in good condition.

- Humidity

Dried bananas must have moisture:

+ Not greater than 18.0% for untreated dried bananas;

+ Between 18.0% and 25.0% for dried bananas treated with preservatives or preserved by other methods (for example, pasteurization).

- And besides, grading is also one of the quality requirements for dried bananas:

Dried bananas are classified as follows: Special Grade, Grade I, Grade II.

Defects that do not affect the general appearance of the product with regard to its quality, maintenance of quality, or presentation in the packaging are allowed.

3. Requirements on standards for the presentation of dried banana products in Vietnam

According to regulations in TCVN 13122:2020, the requirements for the presentation of dried banana products are as follows:

- Uniformity

The amount of dried bananas contained in each package must be uniform and only include dried bananas of the same origin, quality, form, variety, or commercial grade (if any).

The visible portion of the product contained in the package must be representative of the entire package.

- Packaging

Dried bananas must be properly packaged to protect the product.

The materials used inside the packaging must be clean and of good quality to avoid any risk of internal or external damage to the product. The use of paper or stamp materials related to commercial requirements is allowed, provided that the printing or labeling must use non-toxic ink or glue.

Product packaging must be free of any foreign impurities, in accordance with Table 1 TCVN 13122:2020.
