Recently, the Ministry of Education and Training issued Circular 17/2013/TT-BGDDT regarding the framework curriculum for professional secondary education in the following fields: Processing of food, foodstuffs, and beverages; Production and processing of fibers, fabrics, shoes, and leather; Other production and processing.
Training Objectives for the Field of Tropical Crop Product Processing Technology at the Secondary Vocational Level (Illustrative Image)
To be specific, Circular 17/2013/TT-BGDDT stipulates the training objectives for the professional secondary vocational program in the field of Tropical Crop Product Processing Technology. After completing the program, learners will be capable of:
1. Knowledge
- Explain the characteristics, properties, chemical composition, and basic value of some tropical crop products, the general principles and requirements in the technology of processing tropical crop products;
- Understand the chemical, biological, and physical changes and the factors affecting the quality of raw materials, product quality, and food safety during the processing and preservation of tropical crop products;
- Describe and present the basic techniques at each stage in the technological process of processing, quality control of products, and food safety of several tropical crop products;
- Explain the features, structure, working principles, and operation methods of some main machines and equipment commonly used in the processing of some tropical crop products;
- Discuss the main content in production management organization in small production units such as workshops or production teams.
2. Skills
- Organize, manage, and operate a small production unit like a workshop or tropical crop product processing production team, ensuring economic, technical, and environmental requirements;
- Select and classify production materials according to the correct technical standards and ensure the requirements of the final product. Calculate simple indicators for sample testing, product quality, and safety during the production process;
- Perform basic technical operations at each production stage in the processing of some tropical crop products according to the procedural requirements;
- Operate and maintain some main machines and equipment commonly used in the processing of some tropical crop products according to the manufacturer's procedures;
- Diagnose, analyze causes, and propose solutions for common production incidents in the processing of tropical crop products.
3. Attitude
Maintain good moral qualities, cooperate well with colleagues, respect laws and regulations at the workplace, be honest and highly disciplined, meticulous and accurate, and ready to undertake assigned tasks.
